1 1/2 cups oats
2 tsp baking powder
1/2 tsp cinnamon
2 large ripe bananas
1 tbsp maple syrup
1 cup milk (may need more)
1 tsp vanilla
pinch of sea salt
Add all ingredients except cooking spray to a blender and blend until smooth.
Add more milk if needed to thin out batter.
Add cooking spray to a pan or skillet over medium heat.
Once pan is hot, pour 1/3 cup batter into pan per pancake. Cook until bubbles form and pop, then flip over for another minute or two. Repeat until batter is gone.
Top with fruit, peanut butter, maple syrup, nuts or desired toppings and serve immediately.
You can freeze any leftovers. Just thaw them in the refrigerator the night before you want to eat them.
