This is an updated version of my Energy Bite recipe. I have to say, it happened as an accident but I am sure glad it did!
My honey was getting crystallized so I popped it in the microwave for 30 seconds and then poured it all over all the other ingredients. What happened? The chocolate chips melted which ended up being AMAZING because now the chocolate was coating everything AND when I went to roll them into balls, they stuck together way better than before. Plus, warm honey is 1000% nicer to pour than room temperature honey. So now they taste better and are easier to make. Win win!
I highly recommend these as a filling snack (1 or 2 in place of a granola bar) or dessert. They're perfect for camping/ cottage snacks during the summer.
Ingredients:
1 cup oats
1/2 cup coconut and/or ground flax seeds (I prefer a combination that is heavy on the coconut)
1/2 cup chocolate chips
1 tbsp chia seeds (optional)
1 tsp vanilla
1 tsp cinnamon
1/4 cup honey
1/2 cup peanut butter
Directions:
In a bowl add oats, coconut, flax seeds, chocolate chips, chia seeds (if using), vanilla and cinnamon.
Microwave the honey in a glass measuring cup for 20-30 seconds.
Pour the honey all over the other ingredients.
Mix it in well (and watch the chocolate melt- yum.)
Add the peanut butter and mix that in well.
Cover and let sit in the refrigerator for at least 30 mins.
Roll into balls and enjoy!
Store in the refrigerator.
