One Pot Meatless Mexican Dish


Ingredients:

  • olive oil

  • 1/2 of a yellow onion, diced

  • 1 clove of garlic, minced

  • 1/2 cup uncooked brown rice

  • 1/2 cup uncooked lentils, rinsed

  • 2 cups vegetable stock or water

  • 1/2 teaspoon chili powder (or paprika)

  • 1/2 teaspoon ground cumin

  • Salt and fresh ground black pepper to taste

  • 15 ounce can black beans, rinsed and drained

  • 1 1/2 cups salsa

  • 1 small zucchini, shredded or diced into small pieces

  • 1/2 cup frozen corn

  • 3/4 cup shredded cheese

Directions: 1. Heat a large pot or saucepan over medium heat with olive oil. 2. When the oil is hot add in the onion and garlic. 3. Sauté for a couple minutes then add in the brown rice and lentils. 4. Add in the water or vegetable stock, stir and bring to a boil. 5. Once boiling, cover and reduce the heat to low. 6. Simmer for 30-40 minutes, or until lentils and rice are tender. Meanwhile prepare the other ingredients. 7. If there is any excess liquid in the pot drain it. 8. Mix in all the seasonings. 9. Add in all of the remaining ingredients. 10. Cook until heated through.


Note: for extra flavour and heat I suggest adding a 4oz can of green chillies.
