Have you tried steel cut oats? Personally I like the texture of steel cut oats over quick oats or rolled oats when they're cooked. They also have more fiber than rolled or quick oats because they are less processed, leaving more of the bran intact. Feel free to get creative with this recipe and add in whatever fruit and/or nuts you prefer.
Serves: 6
Ingredients:
1 cup steel cut oats
3.5 cups water
1-2 apples, diced
1/3 cup golden raisins
1/3 cup maple syrup
2 tsp cinnamon
1 tsp vanilla
Directions:
Bring the water to a boil and stir in the steel cut oats. Bring it back to a boil, and then turn heat to low and simmer with the lid on for 30 mins. After 30 mins, stir in the rest of the ingredients and then turn the heat off. Leave the pot on the burner (with the heat now off) overnight. In the morning reheat individual portions in the microwave or serve cold. Serve plain or with milk. Store in the fridge.
