Summer Chickpea Salad

This fresh and tasty salad goes well with grilled meat! The best part about this kind of salad is that it still tastes great the next day. 



Ingredients:

  • 1 can chickpeas, rinsed and drained

  • 1 bell pepper, diced

  • Cherry tomatoes, halved

  • Cucumber, diced

  • Celery, diced

  • Chives (or red onion), diced

  • Feta cheese, crumbled

Dressing:

  • 2 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 1-2 tsp minced garlic

  • 1 tsp oregano

  • salt and pepper to taste

Directions:

  1. Place all salad ingredients in a bowl and toss to combine. 

  2. Whisk together dressing ingredients in a small bowl.

  3. Pour dressing onto salad and refrigerate or serve right away.
