1 can chickpeas, rinsed and drained
1 bell pepper, diced
Cherry tomatoes, halved
Chives (or red onion), diced
Feta cheese, crumbled
2 tablespoons olive oil
2 tablespoons lemon juice
1-2 tsp minced garlic
1 tsp oregano
salt and pepper to taste
Place all salad ingredients in a bowl and toss to combine.
Whisk together dressing ingredients in a small bowl.
Pour dressing onto salad and refrigerate or serve right away.
