Introducing one of my favourite breakfasts! The way the yoke breaks and combines with the creamy avocado and crunchy, chewy toast.....oh yum! Serve with an Iced Latte for the most satisfying breakfast you've ever had.
1 ripe avocado
1 tsp egg seasoning (see below)
2 pieces of toast
2-4 over-easy eggs
freshly ground black pepper
In a spice jar, combine 2 tbsp paprika, 1 tbsp celery salt, 1 tbsp seasoning salt, and 1 tsp black pepper.
Mash the avocado and stir in the seasoning. Meanwhile, cook the over easy-eggs, and toast the bread. Spread avocado on toasts and top with 1-2 eggs per toast. Sprinkle with freshly ground black pepper. Enjoy!
