Campfire/BBQ Pie Plate Dinner

This is one of my go-to camping meals. It only takes a few minutes of prep time at home and then it's so easy once you're at your campsite - just let it cook over the fire while you're relaxing or setting up your tent. For the non-campers out there, this meal can also be made on the barbecue.



Ingredients for 2 dinners:

  • 2 aluminum pie plates

  • cooking spray

  • 1 potato

  • 1 bell pepper

  • 1/2 zucchini

  • 1/2 small onion

  • 2-4 white or brown mushrooms

  • olive oil

  • seasonings of choice (suggested: Italian, cumin, paprika, salt, pepper)

  • 2 hamburger patties

  • Aluminum foil

Directions:

  1. Spray the insides of the pie plates with cooking spray.

  2. Dice the potato, bell pepper, zucchini, onion and mushrooms and divide between the pie plates.

  3. Toss with olive oil and seasonings until well coated.

  4. Break the burger patty into small pieces and toss with the vegetables.

  5. Wrap the pie plates with 2 layers of aluminum foil.

  6. Store in a cooler with lots of ice or refrigerator until ready to cook.

  7. To cook: place the pie plates on a fire grill or bbq and cook until meat is cooked through and veggies are soft. Shake the pie plates periodically the ensure nothing sticks and everything cooks evenly.

  8. Serve right away.
